~ Recipe Descriptions ~

This sampler includes 5 recipes:
1.    3-Layer Enchilada Casserole
Dig into this!  This vegan beef enchilada casserole is a cinch to make but delivers layers of flavors from the soft and mellow corn tortillas to the melted cheese atop mildly (or spicily!) seasoned veggie burger.  You only need to open a few cans and packages and start layering.  It bakes for 1 hour and 15 minutes, allowing you precious time to spend with pets or other loved ones or to catch up with a well-deserved nap.    This is a great option for relaxed weekend cooking with possible leftovers.  
Vegan Transition Ingredients:  Vegan veggie burger, vegan cheese shreds
2.    Broccoli Beef with Hoisin Sauce
Vegan Beef and Broccoli in a Flash!  This quick and easy version of broccoli beef makes use of pre-seasoned tender beef tips, precut vegetables, purchased hoisin sauce and frozen rice.   Matchstick carrots are included to increase the veggie content, but exclude them if you prefer.   This “pour-n-snore” recipe takes less than 5 minutes to assemble. 30 minutes in the oven, and it is done:  tender beef, crispy vegetables, hot rice–all deliciously highlighted by the very flavorful sweet and salty hoisin sauce.

3.    Confetti Chicken and Rice
An American Staple Veganized in No Time!  Vegan chicken fillets give this mild classic chicken and rice casserole the vegan twist with only 4 ingredients.   Simply layer the ingredients in a baking dish and pop it into the oven for 45 minutes for a go-to classic.  Yum! 😊

4.    Double Cheeseburger Pie
Layers of mouthwatering deliciousness!  This veganized version of cheeseburger pie has 2 layers of awesome burger, cheese and onions just like a really good (vegan) double cheeseburger!  It is a Pour-n-Snore™️ comfort food that takes less than 5 minutes to assemble, and the only utensil you need to prepare it is a spatula to smooth out the layers.  Allow it to bake for 45 minutes while you take a nap or do other things, preferably fun 
😊.  Serve with shredded lettuce, tomatoes, vegan bacon bits, and homemade vegan thousand island dressing (recipe included) if desired.

5.    Easy Chili
Seriously Easy, Seriously Tasty Chili!  Find comfort in a bowl of vegan chili that practically makes itself 😊.  Taking advantage of convenience products, this recipe is a hands-off version that simmers for an hour.  Use canned spicy tomatoes and hot canned chilis to crank the chili’s heat level up if desired.  Top it off with sliced onions, vegan sour cream, vegan cheddar cheese shreds and corn chips for a fully loaded spicy, creamy, crunchy bowl of goodness.
